Alligator Sauce Piquant

We were definitely blessed when a good friend of ours gave us some beautiful alligator jaw meat. We decided to cook it 3 different ways to see which way we like the most! This is just an amazingly delicious way to cook alligator jaw meat! The flavor in this meal blows your taste buds away! Shane really out did himself on this one! Here’s what he did;

First he cut up the alligator jaw meat in bite size pieces, and seasoned it with Garlic Blend and browned it. After it cooked down about 15 mins stirring occasionally he added about 2 cups of water to the pot and brought it to a boil. Once it was boiling he added Roux. We do not always make our own Roux, so when that happens we use a wonderful jar Roux. We love Savoie’s Original old fashion Dark Roux. He added two heaping table spoons of the Roux to the pot and stirred until Roux completely melted. Then he added 1 can of diced tomatoes and 1 can of sauce tomato sauce, and seasoned with Garlic Blend and added about 1/2 cup of Zydeco Chop Chop. Once it came up to a boil while he stirred occasionally, he then lowered it to simmer and covered it. It simmered on low for over an hour. He occasionally stirred and added water if it needed. We cooked it until meat was tender which was just over an hour to an hour and a half. This is such a DELICIOUS meal bursting with all kind of flavor! We hope you give it a try!!!
