One of my favorite comfort foods is Potato Soup especially loaded potato soup! I have practiced and practiced at potato soup over the years, and have finally come up with an amazing homemade CROCKPOT that's right Crockpot = EASY...nothing better then easy and delicious!!! So as I have said in other recipes I am not the best at measuring when it comes to cooking, but for this recipe I made sure to be better at it! I am so glad I did that because this really did come out so delicious, and I really hope y'all try it out!!! Please let me know what you think of this awesome recipe if you do try it out! 2-3lbs of potatoes (rinsed, peeled and diced)
Beef broth (I used 4 low sodium beef bullion cubes) you can also use chicken broth or bullion *note the beef bullion gives this an amazing extra depth of flavor
4 cups water or broth (I used 4 cups water and 4 beef bullion cubes)
1/4 cup Zydeco Chop Chop
1 tablespoon minced dehydrated garlic (you can use fresh or jar garlic)
1 large onion chopped
2 cups shredded cheddar cheese
1 cup Sour Cream
1/2 pint of whipping cream (you can also use evaporated milk or half and half)
4 table spoons butter
1/4 cup of all purpose flour
I seasoned with half tablespoon of Garlic Blend and half tablespoon of Smoked Jalapeno
Seasoning Garlic Blend & Smoked Jalapeno Blend (I garnished with Smoked Jalapeno)
*Note you can use whatever your favorite seasoning is
Here is what I did to make this awesome potato soup;
I added my diced potatoes, water, beef bullion, onion, garlic, a couple of shakes of seasoning and 1/4 cup of Zydeco Chop Chop. I stirred it all together and cooked it on high for about 4 hours. You can also cook on low for 6-7 hours.
When it was close to the 4 hours of cooking I made a blonde roux for thickening the soup. It's so easy to do! I melted 4 tablespoons of butter in a saucepan over medium heat. Once my butter was melted I added a 1/4 cup of flour stirring constantly to mix the flour and butter until I got an almost dough like consistency, then I added my heavy whipping cream slowly while stirring to make a light colored roux like texture. Then I stirred the "blonde roux" mixture immediately in the crockpot with my cooked potatoes. Which by the way were perfect for mashing and mixing the other ingredients together. I can not express enough how easy this was!
I combined everything in the crockpot and then I hand mashed with my hand potato masher about 3/4 of the potatoes in the pot and stirred well. After the mashing and stirring, I stirred in 2 cups of the shredded cheese (be sure to have some cheese for garnish). Be sure to mix the cheese well, then I mixed in a cup of sour cream. Mix everything together well then cook an additional 30 mins on high. If you want it more soupy just add a little water or liquid of your choice for the last 30 mins of cooking. I like a thick potato soup, so I did not need to add any, but everyone is different :)
After the additional cooking time I stirred the soup, and served in bowls garnished with shredded cheddar cheese, sour cream, bacon pieces, and a few sprinkles of Smoked Jalapeno Blend ;)
