Pork Pastalaya

I decided to throw together a pork pastalaya last night for supper. This is supper easy and best of all a one pot meal! I didn’t really measure (as usual) lol, but I can give really close estimates! Here is what I did to cook this very flavorful meal;

I 1st cut up Tasso and Sausage into bite size piece. While I was cutting up the meat I was getting my pot good and hot. Once pot is hot add the Tasso and sausage, no need for any kind of oil or butter the Tasso and sausage will not stick. I seasoned with Sweet Creole Onion Blend and 1/4 cup of Worcestershire Sauce. While I had the pork browning in the pot I hydrated about 1/2 cup of Zydeco Chop Chop. I put it in a small bowl and covered with water and let soak up the water for about 15 minutes. Then I added the ZCC to the pork and stirred very good. I let that cook about 3-5 mins, then slowly added a cup of water to get all the bit off the bottom of the pot. That is where all the flavor is. I stir the pork and ZCC with water real good to get all the flavors married with the liquid. Once the pork is cooked down good then I added two handfuls of angel hair pasta. I break pasta in half before I add it, but you do not have to do that. I find it just helps to fit in my pot better. After you add the uncooked pasta, add water to cover the pasta. cover and let pot simmer on medium to low heat for 10 mins. After 10mins fluff up pasta and stir all togetheR.
