Rice Dressing is a favorite around our house. It's also a big hit when I cook this dish for demos at grocery stores and when we work festivals and markets. It is a very easy dish to make and oh so delicious! So I am not perfect at measuring...lol I think it's a southern thing. I did however make sure that this time I was more conscious about the amounts of ingredients I was putting in this very flavorful dish.
1lb ground pork
1lb ground beef
1/2 pound chicken gizzards
1/2 pound chicken livers
1 medium onion
1 small bell pepper
1tsp minced garlic
1/4 cup Zydeco Chop Chop (this is optional, but it does give an added depth of flavor) it is a great dehydrated mix of onion, garlic, and bell pepper. I use it all the time.
I use Sweet Creole Onion Blend to sauté the Cajun Trinity (onion, bell pepper, and garlic)
then when I add the meet I add Garlic Blend and a little Smoked Jalapeno. You can use whatever seasoning it is that you use, but WOW the flavors of Cajun Bait Seasoning really takes this rice dressing to a whole new level.
So here's what I do when I make rice dressing;
1st I get 2 cups of rice cooking in my rice cooker.
Now that I have my rice pot going I get the dressing going. I sauté the onion, bell pepper, and garlic in a little extra virgin olive oil. I put a few shakes of Sweet Creole Onion Blend when I sauté the trinity. Once the trinity is cooked down then I add the pork, beef, and chicken livers and gizzards, and seasoned it with Garlic Blend. Once the meat is browned I added about 1/2-3/4 of a cup of water. Get all that mixed good and bring up to a boil, then turn down the heat and let simmer about 20mins. About 15 minutes into the simmer I add 1/4 cup of Zydeco Chop Chop, then let it simmer about another 5 mins. After it simmers for 20 mins or so (when all the water is cooked out) I turn the heat off and let it cool just a bit. By this time the rice is cooked and I take the top off and fluff up the rice and let cool about 5 mins or so. If you mix them both together right away it can turn to mush and I do not like mushy rice dressing...lol! So I let them stand a few minutes then I add a little rice at a time. Mix well when adding the rice to the meat mixture each time. Once all the rice is mixed in then you are ready to serve. Personally I top my rice dressing with onion tops and a few sprinkles of Smoked Jalapeno Blend. The smoked flavor with the dressing is just so amazing. You can season it however you like and with whatever seasoning you use. We of course use Cajun Bait Seasoning. Below is pretty much step by step pictures of my cooking process. I hope y'all enjoy this recipe! On a side note if you don't have time or don't want to make it from scratch we highly recommend Savoie's Rice Dressing Mix. In our opinion it's the best on the market! All you do is cook it and add your own rice, super easy :)
