Sausage & Potatoes Baked

This is a go to meal in our busy household! It’s so simply and not too much prep. I actually call it my lazy potatoes! This is just a cut it all up throw it in a baking dish and let it cook. I love 1 dish meals. So here is what I did;


*about a pound or so of sausage (cut to bite size piece)

* 5-6 medium potatoes (diced) I have used brown, gold & red potatoes so any kind will work.

* 1/2 cup rehydrated Zydeco Chop Chop

* I Seasoned with Sweet Creole Onion Blend (any or all 3 will work for this dish)

*option witch most of the time I use a medium or large onion diced up

So here is what I did. 1st I put a half cup of Zydeco Chop Chop rehydrating with water and a few shakes of Garlic Blend Set it aside. Then I cut up my potatoes in bite size pieces, then cut up the onion. In 9x13 deep baking dish I stir together the potatoes, onion and ZCC and coat with Extra Virgin Olive Oil.

Then I sliced up the sausage, add tossed it up a bit, then cover tightly with foil and baked at 400 degrees for 50 mins.

After the 50mins take foil off stir, and then cook an additional 15-20 mins to brown. I can not express enough how delicious and easy this is. I love cooking this dish with Sweet Creole Onion Blend, but honestly you can use any one of the Blends or all 3! You will not be disappointed by this very flavorful dish!
